Lunchtime Easy Haloumi Salad


Slice haloumi into 1cm slices allowing 2 slices per serving.

Heat 1 TBSP olive oil in a fyypan and when hot add the haloumi slices and brown quickly on both sides.

While the cheese is cooking add a handful of fresh wild rocket to a bowl or plate.

Toss with a few pistachios and add cubed avocado if desired.

Drizzle with avocado oil and a squeeze of fresh lemon juice.

Arrange the golden haloumi on top of the salad and sprinkle the whole dish with dukkha.
