My Special Stir-Fry
This stir-fry is special, not because of its flavour and its deliciousness, but because it is never the same, and I can never recreate it twice. It is also special because it is dead easy and can be made with pretty much any fresh vegetable you have on hand.
Here we have garlic, fresh ginger, red cabbage, broccoli, cauliflower, carrot, zucchini, spring onion, cashew nuts, and for protein chicken mince.
As this is a speedy dinner, all of the vegetable have been run through the Kitchen Whizz with the large grater attachment. No chopping by hand!
Heat coconut oil in a wok or large fry pan until hot.
Add the onion, garlic and ginger and quickly stir-fry without browning.
Add the chicken mince and stir-fry until cooked through and slightly golden.
Next start adding the chopped vegetables one variety after the other, tossing the veges to mix and you go. Add the longest cooking ones first such as carrot through to the ones needing the least cooking last, such as zucchini.
Once everything is cooked to your liking add tamari soya sauce, fish sauce, and tamarind paste as desired.
To finish off throw through a handful or two of raw cashew nuts or pistachios.
